One of the meals that my mom used to cook for me and my siblings is called “giniling.” The word “giniling” litteraly means ground/grind because of the main ingredient which is the ground meat.
She used to cook this for us, because when we were kids, my siblings wouldn’t eat vegetables. So, she would mince the carrots and potatoes and mix them it in with the meat. This way my siblings were tricked as as she served it with a bunch of rice.
We loved this meal and it is still one of our favorites.
As my new family is embarking on new challenges lately, I’ve been cooking meals that are low-carb or Paleo Diet meals.
For over a month now, we’ve been enjoying this Paleo journey as it is a healthy way to eat while still enjoying your favorite foods.

When life is too busy, I cut the sweet potato and the red onions ahead of time. I put it in a ziplock and place it in a fridge. Then it’ll be ready to cook the following day.
Easy peasy and healthy.
